How the Cooking Time Calculator works

This cooking time calculator converts a recipe written for one appliance to the one you have: conventional oven, fan oven or air fryer. Enter the recipe's temperature and time to get the new setting, the new time, when to start checking, and what time to put the food in if you set a meal time.

How the cooking time calculator works

A fan moves hot air across the food, which strips away the cool layer of air around it and speeds up browning. The usual formula follows from that: a fan oven runs about 20°C (about 35°F) lower than a conventional oven and takes about 10 percent less time, and an air fryer, a small and very fast fan oven, runs 20°C lower and takes about 20 percent less time. The page converts any pair through the conventional figure and rounds the temperature to the nearest 5 degrees.

First example. Oven chips at 200°C for 40 minutes in a conventional oven become 180°C for 32 minutes in an air fryer. Start checking at 24 minutes and shake the basket at 16.

Second example. A cake at 180°C for 45 minutes in a fan oven becomes 200°C for 50 minutes in a conventional oven, which is gas mark 6.

How many minutes early should I check? The page shows three quarters of the converted time. Every model runs differently and food packed into one layer cooks faster than a crowded basket, so check early the first time and note what your appliance needs.

Tips and pitfalls

Recipes printed after about 2010 in the UK and Australia often give the fan figure already; if a recipe gives only one temperature and seems too hot, it is probably conventional. Most air fryers top out at 200°C (400°F), and very large items, like a whole chicken over 1.5 kg, may not fit with room for air to circulate. Baking with batters can dome or crack at air fryer speeds; drop another 10°C for cakes.

FAQ

How do I convert oven time to air fryer time?

Reduce the temperature by 20°C (about 35°F) and the time by about 20 percent. A dish at 220°C for 25 minutes becomes 200°C for 20 minutes. Shake or turn halfway and check a few minutes before the end.

Is fan oven 20 degrees lower?

Yes, as a rule of thumb. A recipe at 200°C conventional is cooked at 180°C fan. Manufacturers' manuals sometimes say 10 to 15°C for their models; if things brown too quickly, use the smaller drop.

Does a fan oven cook faster?

A little. At the reduced temperature most dishes take the same time or up to 10 percent less. Long, slow cooking such as casseroles changes very little; small items such as biscuits and roast vegetables gain most.

What gas mark is 180°C?

Gas mark 4. Gas mark 1 is 140°C and each mark adds about 10 to 15°C up to gas mark 9 at 240°C. Gas ovens do not have a fan setting, so convert a fan recipe back to conventional first.

Do I need to preheat an air fryer?

Most benefit from 3 to 5 minutes of preheating for crisp results, and some models skip it automatically. The put-in time the page shows assumes the appliance is already hot.
